Estas no son solo acompa\u00f1antes, o saborizantes, son una especie de br\u00fajula en la creaci\u00f3n y disfrute de los platillos. Hay salsas tan exquisitas como el mole, que en realidad son el platillo en s\u00ed, como si el pollo fuera solo un pretexto final, y acorde para empaparse en ese l\u00edquido.<\/p>\n<p>Otros platillos como los tacos de barbacoa, tan comunes en todo M\u00e9xico, no ser\u00edan lo que representan sin su especial salsa, lo mismo se repite con las conocidas tortas ahogadas. En M\u00e9xico hay cuarenta tipos de chiles (y el 90% de los que hay en el mundo son de originarios de aqu\u00ed), que magnifican la diversidad de salsas existentes.<\/p>\n<p>En la Ciudad de M\u00e9xico, pasa algo similar, a lo que sucede en las grandes ciudades del mundo, aqu\u00ed se concentra un flujo de extranjeros internacionales, pero sobre todo nacionales, y esto hace que la diversidad de comida mexicana sea entera: aqu\u00ed hay platillos y costumbres culinarias de la totalidad de los estados de la rep\u00fablica, reproducidos en cientos de puestos callejeros, restaurantes y centros botaneros. Las salsas no solo son esenciales, son la significaci\u00f3n del platillo.<\/p>\n<p>Te pasamos una lista con muchas de las salsas que podr\u00e1s encontrar en la Ciudad de M\u00e9xico, y sus componentes. Aunque aparentemente existen, solamente, las salsas verdes y rojas seg\u00fan el tipo de chile y tomate, te sorprender\u00e1s de la cantidad de variedades existentes, seas o no mexicano. Recuerda, las salsas son los ejes de los sabores:<\/p>\n<p><strong>Salsa de tomate y jitomate:<\/strong> elaborada tomates y jitomates asados, or\u00e9gano, cebolla, ajo, chiles moritas, chile ancho y az\u00facar.<\/p>\n<p><strong>Salsa de tomate verde con aguacate:<\/strong> chiles serranos, tomates verdes, cilantro, aguacate y cebolla.<\/p>\n<p><strong>Salsa Molcajeteada:<\/strong> chiles serranos, jitomates maduros y ajos.<\/p>\n<p><strong>Salsa de los Reyes:<\/strong> chile mulato, chile ancho, chile pasilla, jugo de naranja, vinagre, aceite, or\u00e9ganos, cebolla, y queso a\u00f1ejo.<\/p>\n<p><strong>Salsa Mexicana:<\/strong> jitomate, pimiento morr\u00f3n rojo y verde, cebolla, clavo, nuez moscada, canela y chile molido.<\/p>\n<p><strong>Salsa de Pico de Gallo con naranja:<\/strong> naranjas, lim\u00f3n, cebolla, jitomate, chiles serranos y aceite de oliva.<\/p>\n<p><strong>Salsa al papaloquelite:<\/strong> chiles cuaresme\u00f1os, chiles cascabel, tomates verdes, hojas de p\u00e1palo, lim\u00f3n, aceite y cebolla.<\/p>\n<p><strong>Salsa brava:<\/strong> chile guajillo, chile cascabel, chile de \u00e1rbol, chile piqu\u00edn, chile de ajo.<\/p>\n<p><strong>Salsa criolla:<\/strong> cebolla, tomate verde, ajo, harina, aceite, chile seco, az\u00facar.<\/p>\n<p><strong>Salsa de agua y chipotle:<\/strong> aguacate, jitomate, chipotles adobados, aceite de oliva, cebolla, queso a\u00f1ejo y or\u00e9gano.<\/p>\n<p><strong>Salsa de ajonjol\u00ed:<\/strong> chile pasilla, ajo, aceite y vinagre, ajonjol\u00ed.<\/p>\n<p><strong>Salsa Coste\u00f1a:<\/strong> chiles coste\u00f1os, tomates verdes, cebolla, cilantro y sal.<\/p>\n<p><strong>Salsa de barbacoa:<\/strong> vino blanco, jitomate, cebolla, az\u00facar, vinagre, sal y mostaza.<\/p>\n<p><strong>Salsa de chile de \u00e1rbol:<\/strong> chile de \u00e1rbol, chiles anchos, tomate verde, jugo de lim\u00f3n, az\u00facar, jitomate y cebolla.<\/p>\n<p><strong>Salsa a la campechana:<\/strong> chiles pasilla, ajo, y naranja agria.<\/p>\n<p><strong>Salsa de chile pasilla:<\/strong> chiles pasilla, aceite de oliva, aceite vegetal, vinagre fino, queso a\u00f1ejo, or\u00e9gano desmenuzado.<\/p>\n<p><strong>Salsa de tu\u00e9tano:<\/strong> huesos de tu\u00e9tano, jitomate, chiles anchos, cebolla, diente de ajo.<\/p>\n<p><strong>Salsa diabla:<\/strong> chile cascabel, vinagre y ajo.<\/p>\n<p><strong>Salsa endiablada:<\/strong> chile cascabel, chile guajillo, chile de \u00e1rbol, raja de canela, pimientas gruesas, or\u00e9gano, vinagre, cebollas, ajo, y sal.<\/p>\n<p>Entre muchas otras. Si de salsas hablamos es primordial saber que puedes jugar con los ingredientes, mezclar sabores y texturas, sin miedo.
